Cicioni is a blend of almonds and cashew nuts which undergo a careful fermentation process. This extraordinary product is made of pure nuts.

How is it made

Equal amounts of cashews and almonds are weighed out and steeped in a special container with water and lactic bacteria for around 10 hours.

After this steeping phase, carefully measured amounts of water and salt are added before the product is milled.

The mixture is then left to ferment in a sealed, temperature-controlled environment until the pH has reached a safe level. The mixture is then pressed into a mould and left to dry for 24 hours.

Once the drying phase is complete, the product is placed in a seasoning chamber for around 5 days, until the desired level of dryness has been achieved.

How to enjoy it

Sliced and layered
on a good piece of bread;
diced and added to salads;
flaked and sprinkled
over a nice bowl of pasta
blended into a cream,
and used as a delicious sauce
